Suddenly, there may be people who think, "I know Shiretoko, but what is it?" I was exactly that too. With the recognition that there is a land called Shiretoko, I visited without knowing deeply what kind of land this is.
The first memorable one I would like to write a little about "salmon". We will also provide information that only local people know because it is on the Internet.
Shari-cho, the gateway to the World Natural Heritage "Shiretoko", is the largest city in Japan for salmon catch for 18 consecutive years. When you look at roadside rest area and souvenir shops, you can always find items related to "salmon", you can see salmon run up at tourist attractions, meet fishing boats loaded with salmon at the port, enjoy the scent of salmon carried by the wind of Sea of Okhotsk, and enjoy various "salmon".
◎Types of Salmon
There are three types of salmon commonly found in Shiretoko, depending on the season when it is caught and how it is grown.
■Autumn salmon
The largest salmon caught in September and October in autumn. In the fall, raw salmon is often sold at supermarkets, but the most famous dish using this salmon is called "Salmon Chanchan-yaki", a so-called fisherman rice. Fry vegetables, salmon, and miso sauce from Hokkaido on an iron plate and eat it with white rice, it is so delicious that it will not stop.
■Toki salmon
Usually, the fishing season is around autumn, but at this time salmon is landed from May to July. The biggest feature is that eggs and whites are not nutritious, rich in fat, and very popular with local people. Seasonal salmon belly (here called "Halas") is the fattest part of salmon, and refers to the large toro and toro parts in tuna. It features a good fat glue, soft texture that melts, and a delicious taste.
■Salmon child
This immature salmon is a rare and valuable premium product that is captured during migration and is captured only once in 1,000 times. To taste such rare salmon, it is best to taste sashimi and melty texture.

This is a salmon run-up spot that can be seen in the World Natural Heritage Area, and photographers from all over the world visit every year to photograph the situation.
World Natural Heritage is also a brown bear habitat. Therefore, be sure to follow manners such as not making noise, not feeding, and staying away by car. Protecting these is an important factor for the coexistence of Shiretoko residents and bears, as well as an important factor for the safety of visitors.

③Utoro Salmon Terrace

Shari-cho Utoro Onsen is not a big town, but the appearance of fishing boats going fishing early in the morning is fantastic and must-see with morning mist. The Salmon Terrace, adjacent to Utoro roadside rest area Syrietok, is open every year during the salmon fishing season from September to October. For hygiene management, the first floor is only for fishery officials, and the second floor is a terrace for tourists.
From the terrace, you can see the fishing boat departing from the port, and if you look below, you can see the sorting of salmon from unloading.

Speaking of Ryoshimachi, it's the turn of fishermen's wives!
The Women's Section of the Utoro Fishery Cooperative is made up of the wives of local fishermen and is a shop where you can eat the most lively items of fresh fish caught in the sea. In the old dining room located in Utoro Fishing Port, you can never enjoy stylish interiors and superb views of Sea of Okhotsk, but I think that the atmosphere full of smiles and humanity is unique to this small Ryoshimachi.
What you want to eat in Shiretoko is "salmon bowl (three kinds servings)". As the name suggests, it is a bowl of three kinds of ingredients: salmon loosening and salmon pickled soy sauce, and it is an irresistible dish for salmon lovers. Simple and unpretentious flavor enhances the taste of the ingredients itself.
